Is It Good to Cook With Extra Virgin Olive Oil, or a Waste of It?
Heat does not make extra virgin olive oil dangerous. It makes it quieter. Whether that is a waste depends entirely on which of three heat bands you are cooking in.

The short answer
Yes, and most home cooking never gets near the limit. Extra virgin olive oil smokes somewhere around 190 to 210 degrees Celsius, while ordinary sauteing sits at 140 to 180. Heat costs you aroma and flavour, not safety, so the real question is whether the dish will taste of the oil at all.
Someone buys a bottle of extra virgin olive oil, reads that heat destroys it, then stands over the stove wondering whether pouring it into a hot pan is throwing money away.
Cooking with it is fine, and most Malaysian home cooking never reaches the temperature people worry about. But there are three quite different kinds of heat in a kitchen, and this oil is the right tool in two of them.
What does heat actually take away?
Heat takes the flavour first. The aromatic compounds that make a fresh extra virgin oil smell grassy and taste peppery are volatile, and they start leaving the moment the pan warms up. The fat itself, which is most of the bottle, is far more stable and changes very little at normal cooking temperatures.
So you are not losing a safe oil and gaining a dangerous one. You are losing the part you paid a premium for. The polyphenols behind the bitterness go the same way, and deep-frying at around 200 degrees Celsius is where that loss becomes total rather than partial.

Where does the smoke point actually sit?
Extra virgin olive oil smokes somewhere between 190 and 210 degrees Celsius, depending on how fresh it is and how much sediment it carries. Normal home sauteing runs at 140 to 180 degrees. That gap is the whole reason this question has a comfortable answer for most of what a kitchen does.

Which heat band are you cooking in?
Almost every decision here comes down to sorting the dish into one of three bands. Raw and finishing, where nothing is heated. Moderate heat, which covers most stovetop and oven work. And high heat, meaning a wok at full flame or a pot of oil deep enough to swim in.

When is a cheaper oil the right answer?
When the volume is large and the heat is high, a refined oil is not a compromise, it is the correct choice. Filling a pot to deep-fry uses far more oil than a saute and destroys the qualities you paid extra for while doing it. Nothing is gained by insisting on one bottle.
A kitchen holding two oils, one neutral and one extra virgin, costs less over a month than one bottle doing both jobs.

Does cooking with it make it bad value?
Whether cooking with extra virgin olive oil is bad value depends on how much the pan swallows. A finishing drizzle uses a spoonful and the flavour is the entire point. A pan of vegetables uses a little more and still tastes of the oil. A deep-fry uses a great deal and returns almost none of it.

What ruins the oil faster than the pan does?
Most households lose more quality to storage than to cooking. A bottle standing open in the warm cupboard beside the hob degrades steadily between meals, which is a far longer exposure than any single pan gives it. Light and heat are the real enemies, and both are usually free to fix.
Keep it closed, away from the stove, out of direct light, and use it within about two months of opening. The refrigerator is unnecessary rather than forbidden, and cold oil simply clouds before clearing again at room temperature.

So, should you cook with it?
Yes, for anything raw and anything at moderate heat, which between them cover most of what a home kitchen does. Keep a cheaper refined oil for the wok at full flame and for deep-frying, and stop worrying about the pan. The bottle left open beside the stove is doing more damage than the sauteing ever will.
